It’s always the right time for pancakes, isn’t it? We all know that the classic ones – consisting of white flour, eggs and milk – are not so healthy, and that many people, due to dietary reasons – intolerance to gluten or lactose – try to avoid them… However, there is some good news! Today, there are many alternative options, healthy recipes that are equally delicious and enjoyable. Below I will present to you one such recipe.
The main advantage of these pancakes is that they are very low in carbohydrates, due to the use of almond flour. In addition, this recipe can be easily modified or adapted to personal taste. By adding a little more flour, you can make them thicker and more compact; if you replace yogurt with milk or kefir, you will get fairly thin crepes.
Ingredients:

200 g of almond flour

150-200 ml of Greek yogurt

2 eggs
-
2 teaspoons of sweetener
-
1 teaspoon of baking powder
-
Pinch of vanilla
-
Pinch of salt
-
Vegetable oil for frying

Preparation:
Mix all the ingredients in one bowl and whisk them with a wire whisk until the mixture is smooth. Heat the pan to a medium temperature and fry the pancakes in sunflower oil, one minute on each side. Serve topped with honey and decorated with almond leaves, berries or Greek yogurt.
