There are numerous reasons to enjoy salmon. This heart-healthy fish is not only versatile, but it also cooks quickly — in just a few minutes. If you don’t want to spend too much time preparing lunch or dinner, this recipe is a go.
What you’ll need is:
- salmon fillets,
- garlic,
- pepper,
- olive oil,
- cherry tomatoes,
- spinach,
- heavy cream,
- parsley, and
- parmesan cheese.
How to cook it?
Season the salmon filets on both sides with salt and pepper.
Heat the olive oil in a nonstick pan and fry the salmon until golden brown: 6 minutes on one side, flip, and 2 minutes on the other.
In a separate pan, melt the butter, then add the minced garlic and cook for 1 minute, or until fragrant. After adding the halved cherry tomatoes, season with salt and pepper. Incorporate the spinach. Cook, stirring occasionally until the spinach begins to wilt. Pour in the heavy cream and top with the grated parmesan. Lower the heat and add the basil and parsley. Cook, stirring occasionally, for 3 minutes, or until the sauce has slightly reduced.
Return the salmon to the skillet, along with the sauce. Simmer the sauce on top of the salmon for another 3-5 minutes.
Great side dishes that go with salmon well are boiled rice, simple lemon pasta, or sauteed garlic green beans.
